Probably the most common question when people attempt to make coconut milk whipped cream. There are a few different answers and fixes for this problem.

  1. The brand you are using. Like I said, this post is not sponsored at all. But we only use Thai Kitchen's coconut milk to make coconut whipped cream. Why? Because they have the creamiest texture that doesn't get watery and chunky when whipped. We've tried a LOT of brands over the years and without fail we always come back to this one.
  2. Chill first. Your coconut milk 100% needs to be chilled first. Leave it in the fridge over night and let it get more solid and creamy. If it's warm or room temp, it will just turn to soup when you whip it. BONUS TIP: freeze your mixing bowl for 10 minutes before whipping the coconut milk to really hold onto that chill.
  3. Separate the can. When you open up a can of chilled coconut milk, the top is thick and creamy and the bottom is that weird watery mixture. Do NOT dump the whole can in. Using a spoon, scoop just the thick and creamy part into a bowl to whip. The watery mix can be saved in the fridge for a smoothie later. Again, it will turn to soup if you add it to your whipped cream.
  4. Use the right sugar. Using regular sugar, honey, maple syrup, or any other sweetener doesn't work well for whipped coconut milk. It is too thin and loose. You need to use some icing sugar (powdered sugar) to get that little bit of thickening. Anything else will make it collapse, be grainy, or again be soupy.

How do you thicken coconut Milk whipped cream?

If you have done all of those things listed above and you are still having trouble getting your coconut whipped cream to thicken up, there are one or two things to try and a couple of things to remember.

One thing you can try is adding a spoonful of tapioca starch at a time to the mix to get it thickening again. Another, is to chill it in the fridge for a few hours longer and then whip again.

Remember, coconut milk whipped cream is not going to be the EXACT same as regular whipped cream. They are different things. Both are delicious and coconut whipped cream is amazing as a vegan or dairy free substitute.

Coconut milk whipped cream does have a slightly different, more silky consistency though. If you do all of these things above, you should get a really nice bowl of silky, creamy, sweet, whipped coconut milk.
