I don’t know about you, but I love a wedge salad. Crispy iceberg lettuce topped with bacon, tomatoes, and drizzles of blue cheese, what’s not to love? It’s a definite classic and one of my personal favorites.

Inspired by this classic recipe, I decided to shrink it down and change it into a party appetizer, rather than a served salad. Since my antipasto skewers are one of the most popular recipes here on Inspired by Charm, I figured you would love these wedge salad skewers too.

Ingredients

This recipe is great because you only need a handful of ingredients to pull it together.Here’s what you’ll need to add to your shopping list:

  • iceberg lettuce – Iceberg is essential for this recipe, it holds its shape and has a great crunch.
  • bacon – I recommend this baking method, but feel free to cook it the way you like best. Just be sure to not overcook the bacon as it needs to be flexible (or you will struggle with assembly).
  • grape tomatoes – I like using a sweeter grape tomato, but use what you like.
  • blue cheese dressing – Pick your favorite. I personally recommend the blue cheese dressing you get in the refrigerated section at the grocery store. It’s so much creamier!
  • blue cheese crumbles – While you don’t necessarily need this item, I think it really adds to the look and flavor.
  • freshly ground black pepper – Black pepper adds the perfect finishing touch to these skewers.

You’ll also need some six-inch wooden skewers. The ones that I used worked great for this recipe.

  1. Begin by cooking your bacon. Once cooked and cooled, slice in half lengthwise.
  2. Next, chop your iceberg lettuce into 20 bite-size chunks.

  1. Thread a wedge of iceberg lettuce, a half-strip of cooked bacon, and a grape tomato onto a six-inch co*cktail pick.
  2. Repeat with remaining ingredients.

  2. Finally, sprinkle with crumbled blue cheese and freshly cracked pepper.
