First: What on earth are “Tenderloin Chains”?

Tenderloin chains are long, slender pieces of meat and fat (alongside a few other tenderloin bits) that are removed when tenderloins are trimmed whole or cut into medallions. I did some taste-testing and was WOWED with the flavor profile and texture, so I decided to save these delicious rarities for our customers to enjoy. Each pack contains 1lb of chains and high-quality trim.

Next: What do I DO with Tenderloin Chains?

Literally anything— Chop them up and use them for tacos, fajitas, steak salads, shepherd’s pies, etc. If you’re looking for small nuggets of yum for any cooking purpose, then these are the nuggets for you!

Simple pan-seared Tenderloin Chain Recipe:

  1. Remove chains from the packaging, pat dry, and slice/chop into 1/2” pieces.

  2. Heat 1 tablespoon oil in a skillet, or saute pan to high heat (or spray a stove-top skillet with a light coating of oil).

  3. Pat the meat dry again and season generously with salt and pepper.

  4. Cook at high heat, turning every 30 seconds or so, browning for about 2-3 minutes total, remove from heat

  5. Serve however you want: mix into a salad with cranberries, candied walnuts, and goat cheese OR serve with a dipping sauce and a toothpick for some appetizer goodness OR pile on a bed of creamy mashed potatoes… the possibilities are endless.
