The Pork Humba
"Humba" is popular braised pork belly dish in the Philippines. The people, especially the ones in Visayas and Mindanao are very fond of it. Ask any Bisaya what his favorite dish is, and humba will most likely be the answer. It is very similar to the Chinese dish, Dong Po Rou.
You will see this dish served during birthdays, fiestas, family reunions and even company events. There are plenty of variations too. Some humba dishes have boiled eggs added to the servings. Some have banana shoots for added flavor.
This delicious dish is a very good rice topping. I don't see any other way of eating it except with rice.
This recipe below is one of the easiest and quickest to make.

Ingredients:
1/2 kilo pork belly
4 cloves garlic
1 small onion minced
2 tbsp vinegar (the white one is preferred)
1/4 cup soy sauce
1/4 brown sugar or less depending on your taste
4 bay leaves also known as laurel leaves
pepper corn
salt to taste
Procedure:
Heat pot and put in the meat. There is no need for oil as the oil from the meat is enough.
Add in the onions and garlic. Mix and cook until the onion is soft.
Pour in the pepper corn, soy sauce and vinegar for the meat to absorb the flavors. Mix well.
Pour in the water and add the sugar. Add the bay leaves after a few minutes. Let the mixture simmer until meat is tender.
Add salt to taste and you should be done! Wasn't that easy?
