Ingredients Needed For Parmesan Baked Cod

  • Fresh Fish-I used cod because I love its mild flavor, but a lot of my readers have used other fish (any mild white fish like halibut or tilapia, etc.) for this recipe with stellar results.
  • Mayonnaise –Please do not use miracle whip. However, if you absolutely hate mayo, substitute it for sour cream or plain greek yogurt.
  • Seasonings and Herbs –This includes, salt, black pepper, garlic, parsley, and basil. Fresh is best!
  • Parmigiano Reggiano –For best results use freshly grated cheese, not the pre-grated stuff.

Bake + Broil

Place fish in the hot oven and bake 10-12 minutes or until fish starts looking opaque and will flake.

Switch oven to broiler and brown the tops of the fish until lightly golden brown, about 1-2 minutes, watching it carefully so it doesn’t burn.

Pro Tip: I find fish, in general, bakes best at a high temperature for a shorter period of time. I recommend baking at 450° F for 10-12 minutes or until just baked. You are looking for the internal temperature of the fish to be 145° F. Of course the time will vary slightly based on how thick your piece of fish is and how hot your oven runs, but this is a great guideline.

Believe it or not, the fish stays unbelievably moist, tender and flaky, plus has this buttery, cheesy, herby slightly crispy crust. Remove from oven and serve with some fresh lemon juice squeezed over your fillet. If you like tartar sauce, try my Homemade Tartar Sauce. It takes this dish to another level!

How do you cook cod without it falling apart? ›

If the fish is skinless your best bet of keeping it together is to handle it as little and as gently as possible. The way I do it is to flip it once, starting it on the top first, then after a minute flipping it to the bottom, which is where the majority of cooking takes place.

Is cod better in the oven or pan? ›

Pan-frying is a great option for cod fillet or loin as there is time to produce a lovely crispy skin without overcooking the delicate, flaky flesh. This is the way cod and similar white fish are often cooked in restaurant kitchens and is very simple to do at home.

Why is frozen cod spongy? ›

A mushy fish is a sure sign that it was not only once frozen, but thawed out improperly. And sadly, no matter how good your seasonings and marinades are, the texture of a mushy fish makes any meal unpleasant. A good way to avoid this is to slowly thaw out the fish overnight in the refrigerator.

Why does my cod always fall apart? ›

Always pat seafood dry with a paper towel or clean tea towel before cooking. Soaking up water on the outside can prevent fish from having a mushy texture. Most of all, it helps shrimp, scallops, and fish get nice and crispy.

What makes cod tough and chewy? ›

Fish that seems tough when you bite into it is probably overcooked. As it moves from done to "overdone," the flesh continues to firm then shrinks, pushing out moisture, which evaporates and leaves the fish dry and chewy. Fresh fish needs little embellishment, for its flavor is as fragile as its flesh.
