In our household peanut butter is a daily staple. I’ve always loved it, even as a child, and my children are loving it just as much. They have it at breakfast and lunch and would probably enjoy it at supper too if they could.
These oatmeal peanut butter cookies with raisins were barely cooled andthey were gone.
These are really easy to make, and great for having your children help with, in fact they could probably do the majority of it themselves, needed help with the oven of course. Plus what child doesn’t love “playing” with their food? They’ll love rolling the dough into balls.
Preheat the oven to 350 degrees F. In a medium sized bowl stir together the peanut butter, honey, and brown sugar. Do NOT warm up the peanut butter or the honey. Add in the oats, salt, baking soda, egg, and vanilla extract. Stir well. Stir in desired add-ins. The mixture will be thick and hard to stir. Press the dough very to form the balls. Place the formed balls onto a cookie sheet and bake for 7-9 minutes.Oatmeal Peanut Butter Cookies

Watch the cookies closely and remove when the bottom barely starts to brown even if they don’t look completely done (they cook more as they cool).
These cookies are quite good for you, not a lot of refined sugar. You don’t have to feel too guilty letting your kids have a few, or perhaps sneaking a few yourself.

I really like this recipe. I like the fact that the only fat is that in the peanut butter. This is a healthy recipe with lower sugar and fat than most. Thank you for this useful and tasty cookies.
