Ingredients & Substitutions for Making this Ninja CREAMi Peach Ice Cream Recipe

This is a peach ice cream recipe without eggs. It’s also low carb and I made it in the Ninja CREAMi ice cream maker. Here’s the list of ingredients I used, as well as some recommended substitutions if you want to use other ingredients.

Ripe peaches– Ripe peaches have a much sweeter flavor than younger peaches. They are softer, too, so they will blend up much easier and smoother. If you don’t have ripe peaches available, you could use frozen peach slices. Just thaw them first before making the ice cream base.

Almond milk creamer– If you can’t find almond milk creamer, you could use plain unsweetened almond milk. But the creamer is better because it is thicker than milk, so it gives the ice cream a firmer, silkier texture. If you like a stronger vanilla flavor, you could also use vanilla flavored almond milk creamer.

I wanted this recipe to be dairy-free so I used a plant based product, but you could use other products, including a dairy-based one.

Monkfruit sweetener– This is my go-to low carb sweetener, and my preferred brand isLakanto. This is typically what I use when a recipe calls for sugar. But you could replace it with cane sugar, raw agave nectar, stevia, or a combination of your favorite sweeteners.

Vanilla bean powder– Vanilla bean powder may be hard to find these days, so you could use vanilla extract or vanilla bean paste. Or leave it out and use vanilla flavored almond milk creamer. You could also use a combination of unsweetened almond milk and vanilla flavored almond milk creamer for a lighter vanilla flavor.

Tips for Making Ninja CREAMi Peach Ice Cream

Can you use frozen fruit in the Ninja CREAMi?

Yes, and no.

Yes, you can use frozen peaches in this recipe. Butthey have to be thawed before using themto make the ice cream base. Big chunks of frozen fruit can damage the machine when you use the LITE ICE CREAM or ICE CREAM function.

You first thaw the fruit, then mash it with a fork a little bit before adding the rest of the base ingredients.

But you can also use frozen fruit, like small berries, with the MIX-IN function. It spins at a slower speed in order to just swirl in extras, so at this speed frozen fruit shouldn’t damage the machine.

Can I make it keto or low-fat?

Absolutely!

This recipe is very low-carb to start with, but if you wanted to reduce the carbs further, here’s what I would suggest. Make the KetoNinja CREAMi Vanilla Ice Creamrecipe but substitute 1 teaspoon peach flavoring or extract for the vanilla extract.

The peach extract is very hard to find, so I would just use real ripe peaches. But you could reduce the carbs a little more by using about 1 1/4 cups of peaches and adding 1/4 cup of heavy cream.

To make it a low-fat peach ice cream recipe, substitute fat-free half-n-half for the almond milk creamer. This may result in a softer ice cream, but it will still be delicious!

Why is the ice cream powdery or crumbly?

I’ve made dozens of pints of ice cream with all kinds of ingredients, and this is what I’ve observed. Generally, I get a crumbly base most often when I use heavy cream in the recipe. But I don’t usually get a crumbly base when I use coconut cream or almond milk. Coconut cream or almond milk usually blend up very smooth and creamy.

Another factor in whether your pint is crumbly can be the temperature of your freezer. The colder your pint freezes the more likely the ice cream will be powdery. Setting the pint out on your counter while you prep the machine, get out bowls and toppings, etc. allows it to warm up a bit.

How long does it take the Ninja CREAMi to make ice cream?

If you’re new to using a Ninja CREAMi machine, you’ll love how quickly you can make a pint of ice cream! Gathering all the kitchen gear and ingredients and then mixing up the base takes no more than 10 minutes. Then, you freeze the base for 24 hours.

Once it’s frozen, the ICE CREAM function will blend it all up in about 3 minutes. If you want to add some mix-ins, that takes a few more minutes.
