Don't forget the recipe below: Chorizo Stuffing•1 cup coarsely crumbled cornbread•1 celery stalk, finely chopped•1 medium carrot, finely chopped•1 medium white onion, finely chopped•1 pound fresh Mexican chorizo•1 tablespoon unsalted butter•1/2 cup chicken stock (low-sodium store-bought is fine)•1/4 cup chopped fresh cilantro (extra for garnish optional)•Grated cotija cheese for garnish (optional)Instruction: Preheat oven to 350 degrees F. Heat a large skillet over medium heat and cook the chorizo, breaking it up with a spoon and stirring occasionally as it cooks, until it begins to brown, about 5 minutes. Add the onion, carrot, celery, and garlic to the chorizo and cook, stirring occasionally, until the vegetables have browned, about 10 minutes. Add the crumbled cornbread and cilantro and gradually pour in enough of the stock so the stuffing is not too dry but at the same time not too wet. Stir gently and well. Butter a small casserole dish. Spread the stuffing in an even layer. Bake until it's heated through and lightly browned on top, about 20 minutes.     Want to make an easy and tasty treat in the air fryer for dinner? 🍴 Check out the Crispy Chicken Tenders recipe.Ingredients:• 1lb chicken tenders• 1 cup of breadcrumbs• ½ cup of grated Parmesan cheese• 1tsp of paprika• 1 tsp of garlic powder• Salt & pepper• 2 eggsInstructions:1. Preheat the air fryer to 200 degrees Celsius2. Mix breadcrumbs, parmesan cheese, paprika, garlic powder and salt & pepper in a shallow dish3. Beat eggs and then dip each chicken tender into the eggs. Then, coat with the breadcrumb mix4. Place the tenders in the air fryer basket in a single layer5. Air fry for 12-15 minutes and flip them halfway through. Cook until they are golden brown and cooked through

    What do you do when you've forgotten to plan and you have nothing to eat?That's me this week... I totally forgot I hadn't prepared for #foodiefriday!It needs to be something quick and easy with store cupboard ingredients... so here it is, quick as a flash ... "Almost Perfect Smokey Fiesta Beans "Ingredients:1 can of baked beans4 slices of bread (of your choice)1/2 onion, finely chopped (no need for precise chopping)1/2 pepper, diced (you can use frozen diced peppers to save time)1 clove of garlic, minced1/2 teaspoon of chilli powder1/2 teaspoon of smoked paprikaGrated cheddar cheeseSalt and pepper to tasteOlive oil for sautéingInstructions:In a pan, heat a small splash of olive oil over medium heat. Add the chopped onion, diced pepper, and minced garlic. Sauté until they are softened.Sprinkle in the chilli powder and smoked paprika, and continue to cook for another minute to release the flavours.Add the can of baked beans to the pan and mix everything together. Let it simmer for a few minutes to combine the flavours. If you prefer a thicker sauce, you can simmer it a bit longer.While the beans are simmering, toast your bread slices or your wraps.Spoon the spicy BBQ baked beans over the toast. If you want to make it even heartier, top it with grated cheddar cheese and let it melt.This version of Baked Beans on Toast might sound a bit of a cop out, but I know what it's like to live in the real world. Plus it's quick and satisfying. Add green salad as an accompaniment for extra points! 😊

    QuesadillasA quick and easy lunchtime treat, perfect for a rainy day! You can really add what you like to your quesadillas but this is what I’ve used in this video. The mix will make enough to do roughly 4 wraps, it can also be stored in the fridge for a few days so you can make a really quick lunch. Ingredients1 red onion1 pepper1 grated carrot1 garlic clove chopped1 red chillli chopped1 tin black beansSalt and pepper1 tortilla wrap per personFor the spice mix:1 large tablespoon of tomato puree1 large tablespoon of cider vinegar1 teaspoon cumin1 teaspoon paprika ( I liked smoked)¼ teaspoon cayenne pepperSprinkles of some chipotle chilli flakesGrated cheeseguacamleInstructionsHeat the oil in a large frying pan and cook the onion, pepper, chilli and garlic for 2 mins, add the carrot. Add the spices mix together in a pot and mix into the saucepan. Tip in the beans and a splash of water. season generously.Butter one side of your tortilla wrap and place on the frying pan (butter side down) Spread some of the mixture onto one side of the tortilla and scatter over some cheese and guacamole. Cook for about for 1-2 mins and then turn over the tortilla until both sides the tortillas are crisp and golden and the cheese is melting. Serve warm, cut into wedges, serve with salsa and soured cream for dipping if you wish. #recipes

    One of my all time favorites! Use for turkey wraps, tacos, hamburgers and so much more!! Spinach Crust Pizza Ingredients:Crust• 2 cups raw spinach leaves – 1 vegetable serving because it shrinks as it cooks 1 egg (large)• 1 cup shredded low fat Kraft Italiano cheese blend• 1/8 teaspoon salt,• 1⁄4 teaspoon pepperPizza Sauce3⁄4 cup chopped grape tomatoes 1 clove garlicDirections:• -Preheat over to 425• -Pull out a pizza sheet, or cookie sheet, and cover with parchment paper• -spray the parchment paper generously with a lot of nonstick spray• -In a magic bullet, blend the spinach and egg until it’s a baby food consistency• -Add in cheese and spices and pulse until just combined. (I added oregano instead of pepper)• -spread evenly on the parchment paper (make thin crust so it cooks through)• -bake at 425 for about 15 minutes. Edges should start getting brown and crispyTop with sauce, cheese and desired toppings (I love chicken)-Place back in the oven and broil just until cheese is melted

    Fried Bologna and Egg Sandwich Ingredients:-2-3 slices of bologna-2 eggs-2 slices of white bread-Salt and freshly ground black pepper to taste-Butter or oil for fryingInstructions:-Heat a non-stick skillet over medium heat and add a little oil or butter.-Place the bologna slices in the skillet. You might want to make a small cut from the center to the edge of the bologna slices to prevent them from curling up as they cook.-Fry the bologna slices for about 1-2 minutes on each side until they are nicely browned. Then remove them and set aside on a plate.-In the same skillet, crack the eggs and sprinkle them with salt and pepper. You can either scramble them or fry them sunny-side up, over-easy, or over-medium, depending on your preference.-While the eggs are cooking, you can optionally toast the bread slices.-Assemble the sandwich by placing the fried bologna on one slice of bread, topped with the cooked eggs, and then the second slice of bread.-Cut the sandwich in half, if desired, and serve hot.-Enjoy this hearty and delicious sandwich, a throwback to simpler times with every bite!
