Can you freeze the Vanilla Fudge? I want to make it for favours at my sons wedding.

Nigella's Vanilla Fudge (on the Nigella website) is a fairly traditional boiled fudge. It keeps fairly well and if you keep it in the fridge it will last up to 3 weeks. It will also freeze for up to 3 months, though there is always a small risk with fudge that the texture changes slightly on defrosting.

Fudge can dry out and becomes crumbly so you need to package it carefully for freezing. If freezing the fudge then try to freeze it in large blocks. Line the tin that you use to set the fudge in with baking parchment (parchment paper), leaving an overhang on two opposing ends of the tin, so that you can lift the block out easily. Wrap the block tightly in a double layer of cllingfilm and then a double layer if foil. Defrost the fudge (still in its wrapping) for 3-4 hours at cool room temperature and then cut into squares. It is best within 1 week of defrosting. If you have to cut the fudge before freezing then layer the pieces in resealable containers with baking parchment between the layers of fudge. As there is greater risk of freezer burn with smaller pieces you may prefer to freeze only the fudge pieces for 6 weeks.
